The mandatory record logs: positive fridge and freezer temperatures, frying-oil quality.

AFSCA Log Kit

What's in the kit

  • Frying-oil quality log
  • Temperature log — positive fridge
  • Temperature log — freezer

Fridge temperature log: what are these sheets for?

A fridge that warms up gives no warning. Writing the temperature down every day is what lets you spot it in time, and prove it. During an inspection, these sheets show that your self-checks really run, not just on paper on the day. The kit contains three sheets: fridges, freezers and frying oil.

Which temperatures to log, and when?

Note the temperature read on each fridge and each freezer, at a set time, ideally at opening, with the date and your initials. One line per appliance, one sheet per month: at a glance, you see if an appliance is drifting. The limits to respect are those of your self-checking guide and of the labels of the stored products.

What to do when a reading is off?

A reading outside the limit is not a fault, as long as you act and write it down. Note on the sheet what you did: products checked or set aside, a door left ajar closed, a technician called, a new reading an hour later. That « action » column is what shows you are in control.

How to check frying oil?

Overused oil changes colour, smokes sooner and tastes acrid. Rather than judging by eye, measure it with a polar-compound tester or test strips, and note the result. When you change the oil, note that too: date, fryer, initials.

Pair it with the Cleaning kit

Well-kept logs are not enough if the fridges are dirty: combine this kit with the Cleaning kit.

These logs can also be kept in Odres, with the HACCP module.
